Grilled Trout
Or the only way I'll eat "Trash Fish"

This recipe is Andrea's invention, until she made it for me I had never eaten trout and enjoyed it!

4 Medium Sized Trout
2 Slices Bacon
Dried Rosemary
Liquid Smoke
Aluminum Foil

Clean and rinse the trout throughly, make sure you get all of the big vein that runs down the backbone.  Remove the heads from the fish.  Sprinkle the inside cavity of each fish with a pinch of rosemary and 3 to 4 drops of liquid smoke.  Put half a slice of bacon into the cavity of each fish.  Wrap each fish in aluminum foil, making a neat little packet with each fish to seal in all the liquid.

Cook the fish on a medium hot grill for 8 to 10 minutes per side.  Check one fish for doneness, the fish should be flaky and the skin should peel right off the meat.  

This is honestly the only way I will eat trout!  Enjoy!
